After his BSc in medical laboratory science (1984), he gained his PhD on the effects of exercise & diet on human plasma lipoproteins at the University of Aberdeen (1988), and undertook postdoctoral research in Pathological Biochemistry at Glasgow Royal Infirmary until 1994. Since then, he has held academic posts as a Lecturer, Senior lecturer, Reader and Professor of Nutritional Metabolism at the University of Surrey. He is a teacher of undergraduate dietitians, biochemists & medical students, and postgraduates in clinical biochemistry and nutritional medicine, and an active researcher in human nutrition in relation to cardiovascular health.
