Ruth began employment as a Senior Lecturer and Dietetics Programme Lead in October 2016. She teaches on both years of the postgraduate MSc Dietetics programme and is involved in teaching on the undergraduate Nutrition Science BSc. Prior to commencing employment in Higher Education in 2014, Ruth practised as a senior nutrition support dietitian, managing a home enteral feeding caseload and providing a specialist service to those with complex oral nutritional needs.

Ruth's primary research interest is in the prevention and treatment of malnutrition, specifically sarcopenia in the older adult population and disease-associated cachexia
