研究领域

乳蛋白及其组分与生物活性分子相互作用的基础研究,天然多糖食品亲水胶体的理化性质和功能性质的基础研究,以及基于乳蛋白和天然多糖开发生物活性成分输送系统(如乳状液和微胶囊等)及其产业化应用。另外,从事健康科学与技术的产业化研究,主要包括:高蛋白食品和海洋功能食品的研发及产业化,以及基于家庭健康膳食研究及未来智能厨房家电的设计的战略策划等。目前主持国家自然科学青年基金、江苏省自然科学青年基金等多项国家与省部级科研项目的研究
